Notes: It is becoming fashionable to inoculate fermentation tanks with added yeasts and lactic acid. But what Felipe and his team do that is unique is that they isolate the yeasts and lactic acid bacterias from specific varietals that they grown on their farm. After fermenting for several days this Typica variety is then dried in cherry. In some ways, it's quite simple, yet the profile is nothing but simple!
